Cooking Tips
- Toast the cashews lightly in a dry pan before adding them for extra flavor.
- Marinate the chicken for at least 15 minutes to boost its taste and tenderness.
Step 1
Heat some oil in a pot and toss in the whole spices. Let them sizzle for about a minute. Then add the chopped onions and cook until they start to soften, around 2-3 minutes.
Step 2
Throw in the whole red chillies and let them cook for another minute. Stir in the ginger garlic paste and cook until fragrant, about 1-2 minutes. Add the tomato paste and let it cook down for 3-4 minutes.
Step 3
Sprinkle in the cumin seeds, chili flakes, red chili powder, and a pinch of salt. Stir it all together, then mix in the yogurt and cook for another 1-2 minutes.
Step 4
Add the coriander powder, give everything a good mix, then cover the pot and let it cook for 2-3 minutes.
Step 5
Add the chicken pieces, stir them in, cover again, and let it cook for 3-4 minutes until the chicken is mostly done.
Step 6
Finally, toss in some fresh ginger, chopped coriander leaves, garam masala, and the cashew nuts. Give everything a good stir and cook for another minute or two before serving.
