Why This Dish Is Hard To Resist
Cooking Pointers
- Cook ingredients over high heat to get a slight crisp and smoky flavor.
- Add soy sauce gradually and taste as you go to avoid oversalting.
Step 1
Boil a pot of salted water. Add the soaked rice and cook it until it’s about 80% done. Drain the water and let the rice cool down.
Step 2
In a pan, heat some oil. Beat 2 eggs with a pinch of salt and a little yellow food coloring, if you have it. Pour the eggs into the pan, cook for a minute or two, then scramble them and set aside.
Step 3
In another pan, heat some oil and sauté chopped garlic and red chilies for about a minute. Add the chicken pieces, season with salt, and cook until the chicken is done, about 3-4 minutes.
Step 4
Toss in chopped french beans, carrots, capsicum, and cabbage. Stir-fry everything together for a couple of minutes.
Step 5
Pour in soy sauce and red chili sauce, then mix everything well so the flavors come together.
Step 6
Finally, add the cooked rice and scrambled eggs back into the pan. Season with pepper and give it a good stir until everything is heated through.
Step 7
Serve hot and enjoy your homemade chicken fried rice!
