Why This Recipe Is A Must Try
Expert Cooking Tips
- Pre-cook the chicken or use leftover cooked chicken to save time.
- Add a little olive oil or butter to the bread before toasting for extra crispiness.
Step 1
In a bowl, mix together the flour, salt, and yeast. Pour in half a cup of milk and stir well. Add a little more milk, about a quarter cup, and knead everything into a soft dough. Grease the bowl and lightly oil the top of the dough, then cover it with plastic wrap. Let it rest for about an hour until it doubles in size.
Step 2
While the dough is rising, heat some oil in a pan. Add chopped garlic and onion, and cook for a minute until fragrant. Stir in the all-purpose flour and cook for another minute. Pour in the chicken stock, stir well, and let it cook for 2-3 minutes. Season with salt, pepper, and chili flakes.
Step 3
Add chopped capsicum, boiled chicken, and fresh coriander leaves to the pan. Mix everything together and set it aside.
Step 4
Once the dough has risen, punch it down and knead it briefly. Divide it into 6 or 7 small balls. On a floured surface, roll each ball out flat. Spoon some of the chicken filling onto the side, make a few slits on the dough, and fold it over to create the chicken bread.
Step 5
Top each piece with extra capsicum and tomatoes for garnish. Brush the tops with beaten egg to give them a nice shine.
Step 6
Bake in a preheated oven at 180°C (350°F) for about 20 minutes, until golden and cooked through.
Step 7
Let them cool slightly, then enjoy your homemade chicken pizza bread!
