Step 1
In a jar, mix the yeast, sugar, and warm water. Cover it and let it sit for about 10-15 minutes until it gets frothy.

In a bowl, combine the flour and salt, then add the yeast mixture. Mix and knead until you get a soft, smooth dough. Add the oil and knead again. Cover the dough with cling wrap and let it rest for an hour.

While the dough is resting, heat some oil in a pan. Add chopped garlic and cook for a minute, then toss in the chopped onions and cook for another 1-2 minutes. Add the ground chicken and cook until it turns white.

Season with salt, pepper, and chili flakes. Stir in the chopped capsicum and cook for a minute more. Then add the cheese and mayonnaise, mix everything well, and turn off the heat. Set the filling aside.

Once the dough has doubled in size, punch it down and divide it into small balls. Lightly flour your work surface and roll each ball out. Place some of the chicken filling in the center, then make cuts along the sides and braid the dough over the filling.

Place the braided rolls on a baking tray, brush the tops with beaten egg, and sprinkle some black seeds on top. Bake in a preheated oven at 180°C for 20-25 minutes until golden brown.
