Why This Recipe Is A Must Try
Cooking Tips
- Don’t overcrowd the pan; cook in batches to keep the temperature steady.
- Let the chicken rest on a wire rack after frying to keep it crisp.
Step 1
Make a simple brine: mix water, sugar, and salt together in a bowl until the sugar and salt dissolve.
Step 2
Add the chicken to the brine and let it soak for about 45 minutes.
Step 3
While the chicken is brining, mix the flour, corn starch, baking powder, salt, paprika, cayenne, and black pepper in another bowl.
Step 4
Slowly whisk in some cold water until you get a smooth batter, then pop it in the fridge for 30 minutes to chill.
Step 5
When the chicken is done brining, rinse it briefly to remove excess salt and pat it dry with paper towels.
Step 6
Dip each piece of chicken into the batter, making sure it’s well coated, then fry in medium-hot oil until golden and crispy.
Step 7
Finish cooking the chicken in a 180°C oven for about 20 minutes to make sure it’s cooked through.
Step 8
Serve it up hot and enjoy!
