Step 1
Combine the yeast, sugar, and warm water in a jar. Give it a good stir, cover it, and let it sit for about 10-15 minutes until it gets frothy.

In a big bowl, combine the flour, salt, and the yeast mixture. Knead it into a soft, smooth dough. Add the oil and knead again until it’s well combined. Cover the dough with cling wrap and let it rest for about an hour.

While the dough is rising, heat some oil in a pan. Sauté the chopped garlic for a minute, then add the onions and cook until they're soft. Toss in the ground chicken and cook until it turns white all over.

Season the chicken with salt, pepper, and chili flakes. Stir in the chopped capsicum and cook for another minute. Finally, mix in the cheese and mayonnaise, then take the pan off the heat and set it aside.

Once the dough has risen, punch it down and divide it into small balls. On a floured surface, roll out each ball, spoon some of the chicken filling in the center, then make cuts along the sides and braid the dough over the filling.

Place the braided breads on a baking tray, brush the tops with beaten egg, and sprinkle some black seeds on top. Bake in a preheated oven at 180°C for 20-25 minutes, until golden brown.
