Why This Dish Is So Satisfying
Simple Cooking Tips
- Make sure the dough is soft but not sticky to handle easily.
- Cook dumplings in simmering water, not boiling, to keep them tender.
Step 1
Place the chickpea flour fritters (phulki) in a large bowl and cover them with water. Let them soak for about 2 hours so they soften up nicely.
Step 2
Once soaked, add boiled chickpeas, boiled potatoes, chopped tomato, onion, cabbage, and a good sprinkle of chaat masala to the bowl. Mix everything gently.
Step 3
In a separate bowl, whisk together yogurt and a little water until smooth. Pour this over the chickpea mixture, adding as much as you like to get the consistency you want.
Step 4
Blend fresh mint leaves, coriander leaves, green chilies, lemon juice, salt, cumin seeds, and a splash of water until it forms a smooth, flavorful paste. Stir this into the main bowl.
Step 5
Give everything a final mix, then sprinkle some chili flakes on top for a bit of heat. Serve immediately and enjoy!
